    Based on cottage cheese


    Viennese waffles made with cottage cheese are very tender.

    Ingredients:

    • low-fat cottage cheese - 2 packs;
    • Flour - 150 g;
    • egg - 3 pcs.;
    • butter - 100 g;
    • granulated sugar - 2 tbsp. l.;
    • salt - 1 tsp;
    • vanillin - 1 tsp.

    The waffles are prepared as in the previous version. The only difference is that the cottage cheese must be ground several times in advance and excess moisture, if any, must be removed. The ingredients are combined and mixed with a mixer until smooth and without lumps. The waffles take a little longer to bake because of the cottage cheese, about 7-8 minutes.

    The finished dish can be served with citrus fruits and a mint leaf, which will highlight the delicate taste of the waffles.

    Kefir based


    For waffles you need:

    • kefir - 200 ml;
    • oat flour - 150 g;
    • egg - 1 pc.;
    • butter - 50 g;
    • granulated sugar - 2 tbsp. l.;
    • salt - to taste;
    • baking powder - 1 tsp.

    Preparation:

    1. 1. Beat eggs with sugar and kefir, add salt and baking powder.
    2. 2. Sift the flour and add to the eggs.
    3. 3. Melt the butter, cool and add to the eggs. Knead the dough.
    4. 4. Bake waffles and decorate with pieces of fruit and whipped cream.

    Viennese waffles without milk or eggs


    Another recipe for classic waffles is a version without milk and eggs.

    For this you will need:

    • wheat flour - 450 g;
    • condensed milk - 100 ml;
    • corn oil - 100 ml;
    • water - 1.5 tbsp;
    • soda - 0.5 tsp;
    • salt - to taste.

    Preparation step by step:

    1. 1. Mix the bulk ingredients, sifting the flour in advance.
    2. 2. Add water, oil and 1/2 portion of condensed milk.
    3. 3. Put soda, quenched with vinegar or lemon juice, into the dough.

    Pour the remaining condensed milk over the finished waffles.

    Wafers with chocolate drops


    You will need:

    • chocolate drops - 100 g;
    • egg - 4 pcs.;
    • flour - 1 tbsp;
    • butter - 200 g;
    • granulated sugar - 1 tbsp.

    Preparation step by step:

    1. 1. Beat the egg with sugar and melted butter.
    2. 2. Carefully add flour into the egg mixture in portions.
    3. 3. Add drops to the finished dough.
    4. 4. Bake waffles for about 2-3 minutes.

    Crispy waffles

    Crispy waffles are mainly prepared using sour cream and margarine.

    With sour cream


    For waffles you need:

    • sour cream - 2 tbsp. l.;
    • granulated sugar - 150 g;
    • egg - 3 pcs.;
    • butter - 100 g;
    • cream - 200 g;
    • starch - 10 g;
    • lemon zest - 10 g;
    • soda slaked with vinegar - 0.5 tsp;
    • vanillin - 1 sachet.

    Preparation step by step:

    1. 1. Beat eggs with sugar, add vanillin and salt.
    2. 2. Melt the butter in a water bath, add cream and sour cream.
    3. 3. Add sifted flour to the eggs. Add the homogeneous mass from step 2.
    4. 4. Add lemon zest and soda to the dough.
    5. 5. Bake in batches for about 5–6 minutes.

    Serve with berries or pieces of fruit.

    To prevent the waffles from drying out the next day, you can prepare them differently: beat sour cream, whites and yolks with sugar separately (sugar is divided into 3 parts). Then mix the yolks, flour, butter, knead the dough. Lastly, carefully add the whites and mix. Bake in the same way as in the previous version.

    Blueberry


    These waffles are perfect for a summer breakfast. The main thing is not to damage their structure during the cooking process.

    What do you need:

    • fat sour cream - 150 g;
    • egg - 1 pc.;
    • butter - 100 g;
    • milk - 140 ml;
    • flour - 190 g;
    • powdered sugar - 100 g;
    • fresh or frozen blueberries - 150 g;
    • salt - 0.5 tsp;
    • baking powder - 1 tsp. no slide.

    Cooking algorithm:

    1. 1. Cut the butter into cubes and leave to melt at room temperature. Then add powdered sugar, baking powder, salt and egg.
    2. 2. Sift the flour and carefully add it to the milk.
    3. 3. Add liquid products to the oil. Knead the dough.
    4. 4. Add blueberries.
    5. 5. Bake as usual, about 4 minutes (depending on the power of the electric waffle iron).

    Banana


    The waffles require the same ingredients as the blueberry recipe. However, the berries need to be replaced with mashed one banana, and sugar with fructose (1/2 tbsp.). If desired, you can add chopped pine nuts and vanillin. The dough can be diluted with warm boiled water if it turns out to be too thick.

    Butter can be replaced with margarine. This will not spoil the taste, and the waffles will become crispier.

    With nuts and pear


    Waffles with nuts and pear are very filling and high in calories.

    For the recipe you will need:

    • sour cream - 1 tbsp. l.;
    • margarine - 1/2 pack;
    • egg - 3-4 pcs.;
    • flour - 120 g;
    • granulated sugar - 100 g;
    • vanillin - 1/2 sachet;
    • hazelnuts - 10 g;
    • chocolate - 1/2 bar.

    Filling:

    • sugar - 1 tbsp. l.;
    • liquid honey - 1.5 tbsp. l.;
    • pear - 3 pcs.;
    • cream.

    The dough is kneaded as in the previous version. Nuts and chocolate are crushed to fine crumbs and added to the finished dough. The pear is cut into small cubes.

    Pieces of pear are placed on the finished waffles, honey is poured over the top and sprinkled with powdered sugar, and the ice cream is served separately.

    No eggs


    Viennese crispy waffles can be made without eggs.

    For the recipe you need:

    • milk - 250 ml;
    • wheat flour - 160 g;
    • butter - 130 g;
    • granulated sugar - 1 tbsp. l.;
    • salt - a pinch;
    • dry yeast - 0.5 sachets.

    Cooking algorithm:

    1. 1. Mix crushed yeast with sugar.
    2. 2. Carefully add flour to 1/2 portion of milk, stirring constantly. Add yeast with sugar.
    3. 3. Mix the second half of the milk with cooled melted butter. Add to flour. Knead the dough.
    4. 4. Bake for approximately 2-3 minutes.

    Unsweetened Viennese waffles

    Unsweetened, delicious waffles are suitable for those who are on a diet or want to give up sweets.

    With hard cheese

    For the recipe you will need:

    • cheese "Russian" - 100 g;
    • olive oil - 50 ml;
    • flour - 250 g;
    • low-fat sour cream - 250 g;
    • egg - 3 pcs.;
    • semolina - 50 g;
    • salt - to taste;
    • baking powder - 1 pack.

    Cooking method:

    1. 1. Leave the sour cream at room temperature for about an hour. Add semolina. Let it swell for half an hour.
    2. 2. Beat eggs with butter, add salt.
    3. 3. Sift the flour and add to the egg-cream mixture.
    4. 4. Grind the cheese on a grater. Add to sour cream and semolina.
    5. 5. Knead the dough from the resulting products.
    6. 6. Bake for about 5 minutes.

    The finished dish can be filled with cheese, sausage, peanut butter or butter.

    With flax seeds


    For the recipe you need:

    • flax seeds - 5 tbsp. l.;
    • oatmeal - 400 g;
    • soy (coconut) milk - 2 tbsp.;

    3. 3. Place the resulting cream in the refrigerator for an hour. After the time has passed, remove and beat with a mixer until the cream becomes light in color.
    Sauce
    1. 1. Dilute starch (1 tbsp) in 100 ml of water.
    2. 2. Mix orange zest (1 pc.) with sugar (2 tbsp.) and pour the resulting pulp with 200 ml of water.
