We will need a baking dish. Melt a little butter in it. Then we take lavash. For this dish, regular Armenian is best suited. Of course, ideally, it should not come from a supermarket. I don’t know what the Armenians do to make it so tasty. It must be magic. Armenian lavash is thin and not very hard. That is, the way we need it. We spray it with water. Not very much. Place in the mold so that the edges sag a little. Now take sour cream or mayonnaise and coat it. Place thinly sliced ham on top, then tomatoes. They are cut into rings. This way it bakes better. Three cheese and mix with fresh finely chopped herbs. Sprinkle the pita bread with this mixture, and then break 3 eggs. We wrap the edges of the pita bread and set it to fry on both sides. • - pinch + -
  • a few twigs + -

Preparation

  1. We unfold the pita bread and select a frying pan that is suitable in size - it can be very large or very small - the main thing is to adjust the size of the pita bread sheet, cutting it so that it fits completely into it.
  2. Pour oil into the frying pan, and while it is heating up, sprinkle the pita bread with water and distribute it over the surface directly with your hands - this is necessary so that when moistened it easily curls and does not break.
  3. Fry one side until golden, turn it over and immediately break an egg onto it. Spread it over the surface with a fork, pepper, season and sprinkle with grated cheese.
  4. Without waiting for everything to set, we wrap the edges of the pita bread inward, forming a square or triangle, or simply folding it in half.
  5. Keep it in the pan for another half a minute and turn it off.

Serve hot, sprinkled with herbs

Secrets of a successful snack

If it seems like it won’t be possible to quickly spread the egg over the pita bread and immediately grate the cheese, we’ll prepare everything in advance.

  • While the pita bread is frying on the first side, whisk the egg in a cup and rub the cheese into it. Stir and pour the prepared egg mixture onto the fried side.
  • For those who like juicier dishes, we recommend adding 1-2 tsp to the cheese-egg mixture. mayonnaise.
  • It’s good to add fresh chopped herbs not only on top of the finished omelet in pita bread, as in the photo, but also inside, mixing dill and parsley with a raw egg.
  • For anyone who wants to get lunch or a full dinner, we recommend flavoring the filling with chopped ham or sausage. We will need literally a couple of pieces - chop them finely and add them to the raw egg and grated cheese during the cooking process.
  • Mushrooms, broccoli, Brussels sprouts or cauliflower, green beans or green peas will be no less good - the main condition is that everything should already be ready, because in the 2-3 minutes that the pita bread will fry on the other side, the vegetables will not have time to cook!

When you don’t have ready-made ingredients on hand, but you want to add something to the omelet in pita bread, we’ll prepare it in a slightly different sequence.

The pepper in this recipe will have time to stew and become juicy and soft.

  1. In a frying pan, first fry the chopped sweet pepper, tomato slices and pressed garlic until half cooked.
  2. In a separate cup, make an omelette as usual - combine 1 egg with 3 tbsp. milk, salt and pepper.
  3. Pour the egg mixture over the vegetables and fry covered until cooked.
  4. When the omelette is finished cooking, move it to a cold surface and let it stand for a minute - this will help remove it entirely from the pan without damaging it.
  5. Then, pour a drop of oil into another frying pan and, when it warms up, add lavash soaked in water. Fry and turn over.
  6. Place the omelette on top, adding a large piece of hard cheese if desired, and fold in the edges. Reduce heat and simmer slowly until golden brown so the cheese has time to melt.

If you want to speed up the process, grate a 40-50 g block on a fine or coarse grater or simply chop it with a knife. The main thing is not to cover the dish you are preparing with a lid so that the pita bread does not become damp.

Serve immediately piping hot.

This recipe is for those who do not like dishes in dough and prefer open fried eggs.

  • It is enough to break a couple of eggs or pour the egg mixture onto the already fried side of the pita bread and leave it to finish cooking.
  • Add cheese, ham, and vegetables if desired.

In this case, you can use a lid - this way the dish will cook faster. Serve the open omelet in pita bread, sprinkled with herbs.

If you prefer an interesting presentation of familiar dishes or plan to offer an omelette to guests as a snack, we recommend trying to prepare it according to the following recipe and make it as in the photo.

This time we won’t fry the pita bread; it will remain raw.

  1. Heat the oil in a frying pan.
  2. Meanwhile, make the egg-milk mixture. Salt it, pepper it and pour it into the frying pan.
  3. Since we don’t need a fluffy omelette, we immediately close it with a lid and keep it on medium heat for 4-5 minutes.
  4. While the omelet is cooking, wash the lettuce and cut the smoked chicken breast or ham and cheese into slices.
  5. Place the pan without opening it on a cold surface and after 3 minutes carefully remove the omelette in one piece.
  6. We transfer it to a plate to let it cool, and if we plan to serve the rolls warm, immediately place them on the unrolled pita bread.
  7. Then layer the slices of cheese first, then ham or chicken, and finally add lettuce leaves.
  8. We twist the roll tightly enough so that it does not unwind and cut it into bars 4-5 cm wide.

Serve the omelette roll with lavash, garnished with homemade mayonnaise, mustard or sprinkled with herbs and chopped egg.

In this recipe we will immediately prepare an omelette with any additional ingredients.

  • Fry tomato slices in a frying pan with slices of bell pepper and frozen green peas, and then pour in an egg mixture of 2 eggs.
  • If desired, sprinkle with grated cheese and cover with a lid.
  • Let the finished omelette cool directly in the frying pan, transfer to a plate and cut into strips.

We lay them out on the unfolded pita bread in one layer and roll them into a roll. Cut the finished one into bars and, sprinkle with herbs, serve.

As you can see, when preparing an omelette in pita bread, not only the ingredients play a role, but also the presentation - it can be made interesting, unusual, and, most importantly, different!

Necessary:

for 1 serving

  • Lavash is thin - a piece slightly larger than a frying pan.
  • Egg - 1 pc.
  • Cheese - 30-50 g
  • Salt - to taste
  • Ham, sausage, meat, etc. - optional
  • Butter or vegetable oil for frying - about 1 tbsp. l.

Stir the egg and add salt; if you are using very salty cheese, you don’t need to add salt.

Grate the cheese.

Place a piece of pita bread on a greased frying pan, the edges slightly extending beyond the frying pan.

Place on low heat.

If the pita bread is dense, then moisten it with water, just sprinkle it. Mine is very thin and delicate, so I don’t always do this.

You can also add 1-2 tablespoons of milk or water to the egg, then the pita bread will also steam well.

Pour the egg onto the pita bread.

Sprinkle with cheese.

You can add any additives, or you can do without them.

We wrap the edges of the pita bread. We strive to give some beautiful form, but in the end we resign ourselves to what we get))).

Add heat and fry until golden brown on both sides.

If the fire is very strong, the pita bread will burn, but the filling will remain raw.

It is important to find a middle ground.

Turn over and fry on the other side.

All! Do not remove the products too far, you may have to repeat it! :))

The recipe for the original “dressed” omelet attracts with its simplicity. The preparation process takes only a few minutes. The mixture of beaten eggs is placed inside a thin lavash sheet folded into an envelope in a frying pan. It should be greased with a piece of butter.

In this version, it is impossible to overcook the eggs: the layer of dough not only holds the filling, but also reduces the heat from the pan. The “package” of pita bread must be turned over in time so that it does not burn.

The result is a crispy crust of fried lavash, containing a fluffy, foam-like layer of juicy omelet with spicy herbs. It must be served hot.

Ingredients

  • lavash - 1 pc.
  • chicken eggs - 3 pcs.
  • milk - 50 ml
  • butter - 20 g
  • ground pepper
  • dill - 3 sprigs

Preparation

1. Wash the eggs and break them into a deep bowl. Lightly beat with a fork or hand whisk (no mixer needed) until the eggs are combined into a smooth mixture.

2. Pour milk over the eggs. Mix with the same whisk.

3. Add finely chopped greens. Add a little salt and ground pepper to taste. Stir.

4. Now you will need a sheet of pita bread of any shape. It can be prepared at home or bought. Line a high-sided pan with this sheet. The edges should hang down. Add half the butter to the bottom of the pita bread.

5. Carefully pour the omelette mixture into the center.

6. Lift the edges of the pita bread on all sides towards each other. Be careful not to let the beaten eggs escape. Spread the remaining slices of butter on top. Cover with a lid of the required diameter. Set on low heat. Cook for 5-6 minutes on one side. After the specified time, remove the lid and look at the underside.

This dish is perfect as a hearty, beautiful and unusual breakfast. Well, judge for yourself: the omelette itself is tasty, but a little banal.
